Chicken Afritada


Ingredients

  • 2 lbs chicken drumsticks, skin on
  • 3-4 small potatoes, peeled and cubed
  • 1 carrot, chopped
  • 1 yellow bell pepper, sliced into strips
  • 3 cloves garlic,chopped
  • 1 (14 oz) can tomato pure
  • 1 can (8 oz) pineapple chunks, drained (reserve syrup)
  • 2 tablespoons soy sauce
  • 3 dried bay leaves 
  • 1/2 cup green peas
  • salt and pepper, to taste
  • 6 tablespoons cooking oil, divided

Ingredients

  • 2 lbs. pork (belly or shoulder), cubed
  • 1 medium yellow onion
  • 1 medium potatoes, peeled and cubed
  • 4 pieces ripe saba banana, sliced in half crosswive
  • 6 to 8 cups beef or pork broth

Fish Adobo




Ingredients

  • 2 lbs, round scad (galunggong), gutted and cleaned
  • 1 tablespoon minced garlic
  • 4 dried bay leaves
  • 1 tablespoon whole pepper corn
  • 5 tablespoons dark soy sauce
  • 3 tablespoons white vinegar
  • 1 cup water
  • 2 tablespoons sea salt

Sisig Taco

  • 2 pounds of pig's ears
